What is γ-amino butyric acid (GABA)?

γ-amino butyric acid (GABA) is a naturally occurring non-protein amino acid and an important inhibitory neurotransmitter in the mammalian central nervous system, which formed by glutamate via glutamic acid decarboxylase catalytic conversed.High concentrations of GABA present in both our brain and the retina of the eye. It also present in the seed germ of plants such as vegetables and fruits, but the content is scarce.

The activity of glutamic acid decarboxylase in rice germ is high, which is very suitable to prepare  a functional food contains γ-amino butyric acid.
